Recipe Makeover – Rosh Hashanah Edition

With the holiday season upon us, it’s easy to let loose and celebrate with loved ones and food. Lots and lots of food! While it’s healthy to make exceptions during times of celebration, you can help yourself by sticking with your goals during the holidays.

One food ritual for Rosh Hashanah is eating apples dipped in honey. If you searched for recipes that include both honey and apples, you would be flooded with recipes that while delicious, also are calorie heavy. Instead of serving a calorie-heavy honey cake with apples in it, why don’t you try a lightened up version of honey and apples adapted from eatingwell.com

Grilled Apples with Cheese, Honey, and Walnuts

2 servings

Ingredients:
  • 1 large or 2 small tart apples, peeled and sliced into ½-inch thick rounds
    • Recommend Granny Smith apples
  • 2 Teaspoons almond or canola oil
  • 1 Teaspoon confectioners’ sugar
  • 1 Ounce sharp cheddar or Parmigiano-Reggiano cheese or your choice of cheese
  • 2 Tablespoons chopped walnuts, toasted
  • 4 Teaspoons honey
Instructions:
  1. Preheat grill or grill pan to medium heat
  2. Toss apple slices with oil and sugar in large bowl
  3. Grill apple slices until just tender and lightly marked, turning once. About 6 minutes total
  4. Shave cheese into thin strips with a vegetable peeler.
  5. Top the apple slices with a sprinkling of cheese and nuts
  6. Drizzle with honey
  7. Enjoy!
