
Recently, our South Hills Early Childhood Development Center (ECDC) was awarded a generous grant to launch a new, yearlong initiative: Elevating Nutrition in ECDC: Learning About Food from Seed to Table. This multi-dimensional program deepens our commitment to nurturing healthy bodies, curious minds, and joyful learning – both in the classroom and beyond.
And we’re already off to a delicious start, as our first group of friends transformed into confident little chefs and assembled veggie quesadillas from scratch. With kid-friendly tools in hand, they chopped peppers, brushed tortillas with butter, sprinkled cheese, and proudly sliced into their creations. The classroom was filled with wonderful smells, big smiles, and an eagerness to taste something they made all by themselves.
This grant allows us to build upon that same sense of discovery and nourishment and over the coming months we will:
- Elevate daily snack time with an expanded selection of whole, fresh foods including more fruits, vegetables, and wholesome smoothies. New food preparation tools will help our staff bring these offerings to life in ways that support healthy habits all year long.
- Bring hands-on cooking into every classroom. Through monthly sessions with Flour Power, our Tots through Pre-K students will learn how healthy foods are made, practice simple culinary skills, and enjoy cooking as a creative, confidence-building experience.
- Support families at home. A licensed nutritionist will offer three education sessions for parents and caregivers, complemented by one-on-one consultations with our in-house nutritionist for individualized support. And each month, children will bring home a new recipe card designed to make healthy cooking a fun, accessible family activity.
Expand and enhance our garden spaces. New garden beds, seeds, tools, and improved fencing will create vibrant outdoor classrooms where children can plant, tend, and harvest. These experiences help them understand where food comes from, how it grows, and how caring for the environment connects to caring for ourselves
Together, these efforts reflect our holistic belief that nutrition is more than just food. It’s about growth, exploration, connection, and lifelong wellness. We are deeply grateful for the generous support that makes this work possible, and we look forward to watching our young learners create and grow throughout this initiative.
